Valentine’s Day Fudge Cake Recipe


Try this quick and easy fudge cake just in time for Valentine’s Day!


  • 1 box chocolate cake mix (light or reduced-fat if available)
  • 3/4 c. low-fat vanilla yogurt
  • 3/4 c. applesauce
  • 1/2 c. water
  • 4 egg whites or 2 eggs
  • 1 (16-oz.) can cherry pie filling
  • 2 c. fat-free whipped topping


Combine cake mix, yogurt, applesauce, water and eggs in a medium-size mixing bowl. Mix together on medium speed for 2 minutes. Lightly coat a 12-inch bunt pan with vegetable oil spray. Pour mixture into pan. Bake at 350 degrees for 30 minutes or until toothpick inserted into middle of cake comes out clean. Cool and remove from pan. Split cake into 3 equal layers. Spread 1/2 of cherry pie filling on bottom layer, top with 1 cup whipped topping. Follow the second layer. Repeat layers with remaining cherry pie filling and 1 cup whipped topping. Finish with top layer. Chill until served. Serves 16.

Tip: This fudge cake stores well. Slice with a serrated bread knife.
